Crisp. Fresh. Fall. It’s here and it’s wonderful!

The weather might be starting to cool down but the inevitable “busy” season is starting to heat up… Here is a crisp, fresh salad perfect for your next fall get together or to prepare ahead of time for a busy week!

Curried Quinoa Salad

(Makes approx. 6, 1-cup servings)

1 cup dry quinoa

2 cups water

1 T. curry powder

1 tsp. cumin

1/2 tsp. crushed red pepper

pinch of salt

Combine above ingredients in loosely covered microwave-safe bowl; cook on high for 8-10 minutes (or until most of the water is absorbed and let stand in microwave. You could also cook quinoa and water per package directions with adding spices to quinoa.

Chill.

In a big bowl combine:

2 medium carrots, finely shredded

1 can chickpeas, drained and rinsed

3 thinly sliced scallions or green onions

2 Granny Smith apples, cored and finely chopped

1/4 c. toasted pumpkin seeds

1/2 c. finely chopped cilantro

 

In a separate bowl, mix:

3 T. Extra Virgin Olive Oil

1 T. Apple Cider Vinegar

1 tsp. Lime Zest

Juice of two limes

 

Toss that mixture with fruit/veggies, then mix in quinoa.

Serve over 1 cup of Spinach.
